One of the recipes that Joey likes to make is spaghetti. In fact, when it's a spaghetti dinner night, I get to butt out of the kitchen and let him do all the work. His famous spaghetti sauce was gluten free with the exception of the pasta which we easily replaced with gluten free pasta.
His pasta sauce was really good... but it's not a secret, his main ingredient is the jarred sauce that you buy at the store. Some jar sauces, like the Prego Traditional is gluten free. However, it's in a jar which means lots of "extra ingredients". After thinking about how processed pasta sauce was; I decided to try to make my own. Boy oh boy... that was an experience.
I went online to study the ingredients that went into pasta sauce. Lots of people had varying opinions, so I opted to just try out my own. I chopped, diced, and mixed all the ingredients in a pot. After mixing a while, I realized my pasta sauce looked like salsa from El Pollo Loco! I tasted it and it tasted like Italian salsa! I was ready to dump it down the drain; when I decided to salvage it, place it in the refrigerator and wait overnight. I thought to myself "let me think about what I could do with it.
With some patience and TLC, I turned my awful sauce into a great pasta dish!
